You can harvest fresh spruce needles from May to Midsummer.

Do you want to avoid flu? Then eat spruce needles every day. You can store them in the freezer. They contain lots of vitamin C.

Snip them with scissors over yoghurt, muesli, sandwiches or salad. Use them like parsley. They make a great decoration (like sprinkles) on birthday cakes too. You can eat them with a clear conscience, especially if you have used brown Indian sugar which is full of minerals instead of unhealthy white refined sugar.

Young spruce needles taste fresh and juicy. You can eat them like candies. But be sure they are a pure light green colour and never use trees growing near a road.
